Delicious energy bars made with homemade sunflower butter, oats, flaxseed and coconut. They are the perfect nut-free snack for kids that can be popped into lunch bags or enjoyed as an after school snack!

Makes 4 servings
Ingredients
- 6 Oz sun butter
- 1/2 cup unsweetened coconut flakes (heaping)
- 1/2 cup cacao nibs
- 1/2 cup kosher nondairy white chocolate chips
- 1/4 tsp sea salt
- 1 tsp maca powder
- 1 tsp cinnamon
- 1 tsp vanilla powder
- 1/2 cup chopped salted almonds
- 1 egg
- 1/2 cup truvia brown sugar baking blend
- 1 cup sunflower flour
- 1/4 cup flax meal
Instructions
- Combine wet ingredients (truvia brown sugar blend, sun butter, egg)
- Combine dry ingredients blended together
- Stir both until a âgranola doughâ is formed
- Flatten into a greased foil lined 9X13 baking sheet
- Bake at 350 for 15 minutes
- Cool and cut
