Chocolate Banana Muffins

These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

Makes 1 dozen muffins
Ingredients
- 1 1⁄2 cups flour
- 1 cup sugar
- 1⁄4 cup baking cocoa
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon baking powder
- 1 1⁄3 cups mashed ripe bananas
- 1⁄3 cup sunflower oil
- 1 egg
- 1 cup miniature semisweet chocolate chips
Instructions
Preheat oven to 350 degrees
In a large bowl, combine the first six ingredients. Combine bananas, oil and egg in a mixer. Mix until smooth. Add dry ingredients just until moistened. Fold in chocolate chips. Fill greased (cooking spray) or paper lined muffin cups three fourths full. Bake 20-25 minutes or until muffins test done.
