Makes 1 dozen muffins
Ingredients
- Cooking spray (as needed)
- 2/3 cup sugar
- ½ cup sunflower oil
- 2 eggs
- 2/3 cup mashed bananas
- 1 tsp Vanilla extract
- 1 2/3 cup AP flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup chopped strawberries
- Crumble Topping:
- 1/3 cup brown sugar
- 2 Tbsp flour
- 1/8 tsp cinnamon
- 2 Tbsp butter
Instructions
Preheat oven to 375 degrees. Spray cooking oil in muffin pan. Combine and mix sugar, sunflower oil and 2 eggs until smooth. Stir in bananas, vanilla. In a separate bowl combine and mix the flour, baking soda and salt. Add to banana mixture. Then stir in chopped strawberries.
