Ingredients

  • 1 cup cassava flour
  • 1/2 cup sunflower flour
  • 1/2 cup gluten free flour mix (I use Cup4Cup)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • pinch of sea salt
  • 1/2 Granny Smith apple, pureed
  • 3 tbsp sunflower oil
  • 1 cup coconut milk
  • 3 tbsp maple syrup

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl, mix dry ingredients together then fold in wet ingredients.
  3. Prepare a muffin tin with liners or grease the pan.
  4. Put a generous scoop in each liner.
  5. Bake for 25 minutes or insert a skewer in the muffin to see if they’re done. If it comes out clean, they are ready.
