Makes 4 servings
Ingredients
- 1 cup cassava flour
- 1/2 cup sunflower flour
- 1/2 cup gluten free flour mix (I use Cup4Cup)
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- pinch of sea salt
- 1/2 Granny Smith apple, pureed
- 3 tbsp sunflower oil
- 1 cup coconut milk
- 3 tbsp maple syrup
Instructions
- Preheat oven to 350 degrees
- In a large bowl, mix dry ingredients together then fold in wet ingredients.
- Prepare a muffin tin with liners or grease the pan.
- Put a generous scoop in each liner.
- Bake for 25 minutes or insert a skewer in the muffin to see if theyâre done. If it comes out clean, they are ready.
